To add hydrogen to (an organic compound) in order to make it more saturated or to change its properties.
Origin:
Early 20th century: from hydrogen + -ate2.
Examples:
- The oil was hydrogenated to make it more stable and less likely to spoil.
- Hydrogenation is used to change the consistency of oils and fats.
- The process of hydrogenation can also increase the melting point of fats.
- Hydrogenation can be used to turn liquid oils into solid fats, like margarine.
- The hydrogenation process is used in the production of many processed foods.
